Keto chaffle for Jabba the Hutt

Never heard of them, but some New Zealanders visiting the parish alerted me to the possibility of waffles, specifically chaffles, as a possible super low-carb menu item for a keto diet. They said that a mini-waffle iron in New Zealand costs them just under thirty bucks, but that – Hey! It’s America! – so I could probably pick one up for ten bucks. It was eight bucks. That’s my first attempt at a chaffle pictured above. Yum.

  • 1/2 cup Mozzarella cheese (shredded) [I used extra-sharp cheddar, but the Mozzarella would be better]
  • 1 large Egg [I’m allergic to whatever is built up with lots of eggs, so I gotta go easy on these]
  • 2 tbsp wholesome Yum Blanched Almond Flour (or 2 tsp coconut flour) [I put the brand because it’s their recipe, but I bought another brand available to me. Just make sure it’s super-fine-milled.]
  • 1/2 tsp Wholesome Yum Psyllium Husk Powder (optional, but recommended for texture, sprinkle in so it doesn’t clump) [As I say, I used another brand.]
  • 1/4 tsp Baking powder (optional) [Yep, that works great.]

I made four times the recipe for my first attempt. It makes eight cheese-waffles (chaffles). They freeze perfectly in small plastic containers and heat up perfectly in a toaster (oven).

The New Zealanders suggested these an an alternative to hamburger buns, which would mean, of course, that you aren’t going to need more cheese for cheeseburger, as there’s already plenty of cheese in the chaffle. And since I’ll probably use these for say, a sausage patty or a hamburger sized for the chaffle, I might throw some red pepper flakes into the batter next time.

The numbers are amazing [I think this list is for two mini-waffles]:

  • 208 CALORIES
  • 2g NET CARBS
  • 16g FAT
  • 11g PROTEIN

So, per mini-chaffle, that would be:

  • 104 CALORIES
  • 1g NET CARBS
  • 8g FAT
  • 5.5g PROTEIN

One carb per chaffle… I like that, a lot.

Up to this point in this my second round of Keto-ing, I’ve not been paying attention to the numbers. I’ve paid the price for that, eating Keto, and not gaining weight, but not losing either, just “plateau-ing”. But these numbers provide some hope for loss. Right now, at 6’2″, I’m 227 pounds. Just right, some say, but my goal is 189.

By the way, in the weirdness of the world right now, almond flour is about the same price as, say, King Arthur flour.

By the way and just to say, I fully realize this post on Keto diet will likely be entirely irrelevant in a few months time, as we’ll all be losing plenty of weight whether we like it or not. More on that in another post.
